Easy Roasted Veggies
Ingredients
• 5 cups assorted vegetable pieces cut in chunks (potatoes, sweet potatoes, winter squash, turnips, carrots, onions and mushrooms), add any vegetables of your choice (broccoli, asparagus, bell pepper, tomatoes, etc.)
• 1 tablespoon vegetable or olive oil
• 2 teaspoons dried Italian seasoning
• 1/8 teaspoon black pepper
• 1/8 teaspoon salt
Directions
• Heat oven to 425 degrees
• Line a 9-by-13 pan with aluminum foil.
• Spread vegetables in pan. Sprinkle oil on vegetables. Stir. Sprinkle with seasoning, pepper and salt. Stir.

Marinated Vegetable Salad
Ingredients
• 3 cups English peas
• 1 cup Shoepeg
corn
• 1 jar pimentos
• 1/2 cup celery
• 1/2 cup bell pepper
• 1/2 cup green onionsMarinade
• 1/3 cup oil
• 3/4 cup vinegar
• 3/4 cup sugar
• 1 teaspoon of salt
• 1 teaspoon of black pepper
Directions:
Mix marinade and bring to
a boil. When marinade is
cool, put over vegetable
mixture and put in refrigerator.
It is better if you let
it stand overnight before
serving.
Sweet Potato Pie
Ingredients
• 6 sweet potatoes, cooked and mashed
• 1 1/2 cups butter
• 1 1/2 cups white sugar
• 3 eggs

William Arthur Larance

Funeral services for Mr. William Arthur Larance, age 75, of Dubach will be held at 11:00 AM Friday November 23, 2012 at New Prospect Baptist Church in Dubach, LA. Officiating the service will be Rev. Mickey Manning and Rev. Michael Sammons. Interment will follow at Hamilton Cemetery under the direction of Kilpatrick Funeral Home in Ruston.

Mr. Larance was born May 10, 1937 and passed away at his residence in Hilly on November 20, 2012.

He was preceded in death by his parents: Blake and Loraine Larance; brother: Joel Larance; and brother-in-law: Hamp Bussey.

Marjorie “Marty” Beatty Mitchell

Funeral service for Marjorie “Marty” Beatty Mitchell of Ruston will be held at 11:00AM, Saturday, November 24, 2012 in Burkhalter Chapel at Trinity Methodist Church in Ruston. Officiating the service will be Rev. Brian Mercer and Rev. Rolly Walker. Interment will follow at Greenwood cemetery under the direction of the Kilpatrick Funeral Home in Ruston. Marjorie Beatty Mitchell died on Sunday, November 18, 2012 at the age of 91 years.

An increased tax break for veterans?

Jurors discuss putting option on ballot

The Lincoln Parish Police Jury tackled a couple of issues last week during their regular monthly meeting.
Action was taken to move one step closer to allowing local voters to decide whether they want to increase the homestead exemption of veterans with a 100 percent service-connected disability rating.
Residents who both own and occupy their property are eligible for a homestead exemption of up to $75,000 of the value of the property.

New local shop offers donuts, breakfast

Those looking for a sweet treat or a quick breakfast have a new option in Ruston.
In-N-Out Donuts, located on West California Avenue, offers a variety of donuts, breakfast sandwiches, muffins, pigs in blankets and other pastry items, as well as coffee, milk, soft drinks and other beverages.
Husband and wife team Theara and Sonika Chhay run the shop, which is owned by Theara’s sister. The couple has many years of experience in a donut shop run by Theara’s sister in Omaha, Texas.

Dubach contemplates animal control fees

DUBACH — In the future, Dubach residents who do not follow leash laws may have to pay a fine to get their pets back.
Dubach Police Chief Russell Croxton explained to council members that currently when he picks up animals, they are boarded at the Ruston Animal Shelter at Dubach’s expense.
“We have a leash law, but no fines,” Croxton said. “Ninety percent of the animals picked up no one claims.”

Locals express holiday gratitude

Editor’s note: With Thanksgiving on Thursday, a few local residents shared their thoughts of gratitude, along with their plans for the holiday.
Sonny Dykes, head football coach at Louisiana Tech University, said this Thanksgiving, team practice will be held in the morning so that everyone can enjoy Thanksgiving dinner together in the afternoon.
